Broccoli and Cheese Soup ![]()

Ingredients :
250 ml chopped onion
250 ml grated carrot
1 1/2 teaspoons butter or margarine
500 ml chopped fresh or frozen broccoli
250 ml skim or 1% milk
60 ml flour
250 ml (113 g) grated reduced-fat cheddar cheese
80 ml pepper
1. In a medium saucepan, sauté the onion and carrot in the margarine or butter over medium-high heat until the onions begin to brown. Add the stock and broccoli. Simmer until the broccoli is tender, 5 to 7 minutes.
2. In a separate bowl, slowly whisk in the milk and flour until smooth. Add the milk mixture to the soup. Bring to a boil and continue stirring until the mixture thickens slightly, 3 to 5 minutes.
3. Add the cheese and pepper. Heat over low heat until the cheese is melted. Serve hot.
