Oven-Baked Chicken Thighs with Potatoes


🔥 Instructions

  1. Preheat oven:
    Set to 200°C (400°F).
  2. Prepare the potatoes:
    In a large bowl, toss the halved potatoes with half of the olive oil, half of the garlic, salt, pepper, and a pinch of thyme.
  3. Season the chicken thighs:
    In another bowl, mix the remaining olive oil, garlic, paprika, oregano, thyme, lemon juice, zest, salt, and pepper.
    Rub the mixture all over the chicken thighs.
  4. Arrange on baking tray:
    Place the potatoes and chicken thighs on a large baking sheet or roasting pan.

  5. Bake:
    Roast for 45–50 minutes, until the chicken skin is golden and crispy and the potatoes are tender.
